Mud Bug Time
Well it's time for them bugs again. Looks like the crawfish season is here again and none too soon. My mouth be watering for some good crawfish etouffee sometimes. It used to be when we wanted crawfish we'd get the crawfish nets and some poles and head for the canals after a good rain. Chicken necks and pieces of what I thought was stew meat was used for bait. I say that because if Uncle Johnny brought the bait it could have been armadillo, possum, coon or anything else. Not much got past him and Mr. O'Brian when they went hunting. There's probably still a few good crawfishing, places left back home but no doubt you have to know somebody to get to them with crawfish being such big business now and everything. It don't matter where you get them, enjoy them bugs. I got a good crawfish etoufee recipe you can get to from the crawfish recipe page. Check it out.
